Fresh Summer Recipes at Home with Vanessa Deleon

Summer has finally arrived, and so has my baby boy “Telly.” With all the excitement of a new baby and my busy schedule, I’m happy to say I still love to cook. 

Trying to stay healthy and eating right is always a challenge, especially after having a baby.  Furthermore, running a business and home adds to my wild and crazy schedule. It is essential for me to have a healthy meal without compromising the time spent in the kitchen. Here are a few of my favorite fresh summer simple recipes.

Quick and Easy

Whether a formal dinner party or casual get together, these recipes are quick and easy to prepare. These recipes take almost no time at all, which is why they’re the best for any hectic lifestyle.

1/2 log of Goat cheese
12 Dates pitted cut in 1/2 (can substitute with figs)
12 Slices Prosciutto, cut in 1/2 lengthwise, roll up and top it off with a little balsamic reduction if preferred.

Arugula washed and spun dry
12 Grilled shrimp, grilled on a pan with onion, garlic, olive oil and black pepper
1 Cup sliced red onions
sliced watermelon
2 cups cucumber
1 package of feta cheese cut into cubes
Kosher Sea Salt
Balsamic glaze
2 cups hulled and sliced fresh strawberries
1 cup orange juice
1 cup of vanilla yogurt
Blender or Bullet
Combine all the ingredients in a blender
a spoon full of yogurt and mint on top for garnish
2 pieces of Fresh Mint (to garnish)
For all the new moms out there, don’t forget to let your friends and family help. There is nothing wrong with stepping back and getting the help you need when your trusted friends and relatives want to step in.
